For me I usually look for high accerlation, medium speed and handling. The others I don't really care about. What stats do you look for in the racers.

I usually look for good handling and acceleration. For other areas, sometimes, but it just feels like I'm not doing well, from what it seems to be handling and acceleration for others instead to compensate with.
Normally play lightweights so ACC and HND

Speed; and lots of it. I mainly pick bikes liek Mach Bike and Bullet Bike since there fast.
Good launch after drifting. And a bike cause they seem to be faster. I used to use Funky Kong and the Honeycoupe but I learned the Mach Bike is better and probably my favorite. And honestly I have no idea why I always take Daisy, I have a theory that her character is faster though I'm just being dumb.
Daisy is considered to be one of the fastest characters, mainly cuz of her stats. In a tier list on MKWII.com, they said Daisy is the 2nd best character.cookieboy17 said:

And I believe through comparing stats, you can see some characters have a little more than others in the stat gauge. That, plus stats are all over the place, even on MarioWiki they show you what stat boosts characters get.

I am all for acceleration. I guess handling is good too.

Anyways, I don't really care for stats, and I wish people didn't pay much attention to them either. Heck, I wish they didn't even exist. Because of the darn stats, all I see is Daisies and Funkies whenever I play in clans/rooms with friends. In the regional races, I see bunch of characters other than the two.
For me, I play as any character I want and any kart/bike I wish to choose.
