That track was okay, it's the heavy snow that slows you down that's annoying.

DK Mountain, like others said, is one of the greatest DK tracks. I would imagine this course being the first one and the barrel would launch you up to Rainbow Road, and other courses, in which it would be 16 tracks in one track. Or 32 in 1.
 
DK Mountain was probably one of the most well-made Mario Kart courses.
DK Pass is very boring for me... no offense to anyone who likes it. :p
DK Summit was cool, it use to be the most picked course back then when I first played on Wi-Fi.
DK's Jungle Parkway was better in the 64, on the Wii, the main thing I don't like; is they made the cave near the finish line screwed up. You can't speed through it or anything without bumping into the wall with a Mushroom. :p
 
DK Mountain (DD) is one of my personal favorite tracks because of its atmosphere and execution; it has the Barrel Cannon. I Snow Mountain (Wii) (I know it's basically the same concept/thing, but the GCN one  has a bit more sentimental value-I give it partial credit for...a certain long-lasting feeling I have that I can't control...oh, and you can't beat giant boulders I somehow have always been able to dodge as obstacles), Parkway (64), one of the all-time classics, and the one in Mario Kart 7 are the great too, along with Pass (DS) being one of my personal best.
