Yep, I haven't really played any Sonic games. Sure, I've tried a few out here and there, but nothing that I played through or owned. Am I missing out?

You are definitely missing out, especially the classics. Just look at Sonic's amazing speed.
And no, I am not in the same boat. I have played the three Sonic The Hedgehog games and they were all fun.

Well, you're missing out on Sonic's glory days. I think after Heroes is when Sonic went down the drain, before Generations at least.
If you played the first 4 Sonic games (Sonic 1, Sonic 2, Sonic 3, S&K), you will enjoy them to no end. Then, hit the Dreamcast era and play Sonic Adventure 1 and 2 and you will experience a totally different gameplay style but one that manages to beat the classics. I love 'em.
I'd recommend those 6 games, then just skip right to either Sonic Colors or Generations. The Sonic Advance series isn't too bad either.

You definitely need to try the classic Sonic games and Dreamcast Sonic games, as Aegis mentioned. I haven't tried Colors or Generations, so I can say about them.

To base your opinion on Sonic being not interesting just because of the Olympic Games spin-offs is the stupidest thing I ever heard. This is why the Mario fanbase is one of the most illogical groups out there.

Which Sonic game? For any newbie to the series, by the way, I suggest you start with Sonic CD first.
