I think mine is still Snowflake Lake. Love the winter theme and I think the board gimmick is one of the more interesting of the later GCN games. Definitely the best star-stealing board.

Castaway Bay. I always have a fondness of island boards, and the islands are vibrant with colors. Donkey Kong and Bowser swapping throughout the game can be annoying, but as long as you have an item to help yourself, you can help yourself in a tight spot, especially if Bowser is the one you're going to land on.

I'll also go with Snowflake Lake. I really liked this one along with MP3's Chilly Waters because of their wintry themes.
